Happy New Year 2007! Let’s talk about some popular diet stories of 2006.

1. Ban on trans fat and junk food advertising: New York City banned trans fats from restaurants in the city. The British Government proposed similar ban on ads for foods high in salt, sugar or fat during programs aimed at children 16-years old and younger. To minimize the childhood obesity the schools all over the world banned fizzy drinks and junk food.

2. Obese kids: According to reports around the world: Sixteen percent of all French children are thought to be overweight. As far as New York City’s children are 24 percent obese and one in five Australian student is overweight.

3. Jamie Oliver vs junk food mums: Jamie Oliver, the British celebrity chef who donned a fat suit earlier in 2006 to year to publicize his show about the quality of school lunches in Britain.

But according to mums favoring junk food kids should be given choice what they want to eat and what they don’t want.

4. You: It is the biggest name in diet books in 2006 written by doctors Mehmet Oz and Michael Roizen. The book was praised by Oprah and immediately moved to the top of the bestseller list on Amazon.

5. Food with advantages: American Dietetic Association found that eating chocolates enriched with plant sterols can significantly reduce cholesterol.

Grilled salad can be served along with pasta and grilled non veg. You just can’t afford to miss gobbling it as it’s nutritious and tempting. Recently, I introduced tempting salads and now I’m here with the grilled one.

This salad needs grilled asparagus, eggplant, zucchini, sun-dried tomatoes, scallions and roasted corn, served warm over and tossed with lettuce in a Dijon balsamic vinaigrettes.

Garnish with fresh avocado. Add grilled rosemary chicken breast or grilled shrimp if desired. You can also use potatoes, mushrooms, bell pepper, red and yellow cherry tomatoes, a squash and other vegetables you are familiar with.


Ingredients

250gms grilled asparagus
100-150gms eggplant
A bunch of zucchini
175-2oogms sun-dried tomatoes
2-3 Scallions
150-175gms roasted corn.

To prepare Balsamic vinaigrette

4 elephant garlic cloves, minced and crushed
3 tbsp Dijon mustard
2 tsp fresh rosemary
1tsp fresh oregano
1/2 cup balsamic vinegar
1 cup extra virgin olive oil
Soya sauce
Salt and pepper to taste

In a blender blend elephant garlic cloves, minced and crushed, Dijon mustard, fresh rosemary, oregano, soya sauce, vinegar, salt and pepper. Mix them, add oil and adjust seasoning if necessary.


Method

In a bowl mix the vegetables, cut for grilling along the balsamic vinaigrette. Finally, sprinkle it with crushed goat cheese. Use Zucchini to garnish.

Salads are indispensable, but they look dull most of time. However, don’t worry, with a little trick you can make them full of colors and tempting like never before.

The trick

The fruit salad can be made more tempting by adding some cherries, strawberries and pomegranates seeds. You can add other vegetables and fruits too.

Instead of just using traditional ingredients such as lettuce, spinach leaves, leejs, spigs of fresh dill and escarole, you can use greens; these can include celery leaves, parsley or other kind of greens from vegetables.

You can also experiment with your vegetables. Most of you must have used radish, carrots, mushrooms, celery and sometimes scallions in your salads. Now be a bit adventurous and add chunks of cooked squash, corn kernels, chilled peas, beet slices, baked eggplant, or turnip bits, along with kidney beans, asparagus, broccoli or cauliflower sprigs, red, green, or yellow peppers, and other seasonal produce to give your salad the desired punch. Use traditional veggies in untraditional ways, such as cooking carrots instead of eating them raw, or adding chunks of baked sweet potato instead of traditional potato salad.

Add some sizzling meat chunks; they may include sausages (chicken, meat and pork). You may go for beef or use slices, cubes, or barbequed dressings.

Make use of fruits during summer time, you may toss in a cup of cubed and de-seeded watermelon, fresh, juicy cantaloupe, or honeydew or honey rock melon. Add seedless or halved grapes, cherry tomatoes, sliced bananas, strawberries, blackberries, or even blueberries. Apple or peach slices, raisins, cherry halves, or kiwi sections add a new type of zest or texture to many salads. Pineapple, orange, and mango chunks add a tropical flavor for a special treat.

Enrich your salads with sunflower seeds, chopped walnuts or pecans, or sprinkle some cashew powder with some cashews. You can go for cheese, tofu and Mexican red chilies.

Fast and easy salad recipe

30oz cooked Lima beans, drained
10 oz chestnut, peeled and chopped
5 oz cooked barley, drained
2 cloves of elephant garlic, finely crushed
2 tbsp fresh squeezed orange juice
1 orange, peeled, depipped and pureed
1 tbsp fresh parsley, finely chopped
1 tbsp chervil, finely chopped
5 oz cheese grated
1 tbsp sunflower oil
1 tsp salt
1 tsp black pepper powder
10 green lettuce leaves to serve

Method

1. In a food processor combine garlic, orange juice, orange puree, parsley, chervil, sunflower oil, salt and black pepper.
2. In a large bowl combine lima beans, chestnuts, barley and cheese. Add dressings and mix well.
3. Spoon the mixture onto the lettuce leaves.
4. Garnish with desired fruits, coriander leaves and do not forget to add sweet potatoes (peeled, cooked and fried).
5. Before serving refrigerate the salad for about 1/2 an hour.

Most of us may be overweighed for several reasons; you may be eating wrong food, the wrong type and that too at an irregular pattern, despite knowing that food has no supplements and is even powerful than any prescribed pill. But most common question that arises is what is good to eat and what is bad? You might follow a diet prescribed by your dietitians, but if you dare to disobey it, you’ll certainly gain weight.

You cannot restrict yourself to specific diets in gatherings, parties and get-togethers. You have to face them in your lives. You may find that even low calorie foods may harm you; even low fats can do the same. You will be astonished to know that low-density lipoproteins can harm you while high-density lipoproteins will definitely benefit you.


Modern lifestyle
is changing your food habits, your life has become so comfortable that you do not bother to get up and work for yourself. Kitchen gadgets and electronic home appliances though make you lie comfortable but at the same time you are indulging your bodies in mess of diseases.

Chocolates, butter, burgers, french fries, coffee, peanut butter can help you fight your overweight problem. These may help fight cough, help your skin to glow, act as a seductive drug, Cocoa based prescription drugs may fight diabetes, dementia and other diseases.


Peanut butter
can help fight your cardiovascular diseases. It’s rich in vitamins B3 and E, contains proteins, magnesium, folate, dietary fiber and arginine. Peanut butter is used in candies, cookies and bakery.


Coffee
can act as a stimulant and it also helps to fight diabetes mellitus and speed up the blood flow in your blood vessels.

Potatoes are rich in starch. You need all of the nutrients in sufficient amount, not too less, nor too high, both will harm you.

Sure you would be happy to adjust with a bowl of soup at your place, especially during winters, it’s really awesome. Chicken stock can fight your cold and fever. Along with chicken stock you can go for cabbage, mushrooms, carrot, spring unions (scallions) and vegetables as per seasons.

If you are vegetarian, you can leave the chicken stalk and prepare a vegetarian stock. Black Pepper will clear your throat. You can have bread scrums along with it.

Main ingredients are Cabbage, Carrot, Mushrooms and Scallions; if you are non vegetarian you can prepare chicken stock (with some pieces of boneless chicken).

Ingredients

200gms Shredded cabbage
200gms shredded carrot
200gms mushrooms (cut into small pieces)
500gms scallions (cut into small pieces)
50-75gms Cornflower
2-3 pinches of Ajinomotto (white crystalline crystals)
Coriander leaves
According to taste
Vinegar
Soya sauce
Chilli sauce
Salt
Black pepper

Method

First, steam the cabbage and carrot in a cooker, until these ingredients are cooked. Add vinegar, salt, cornflower, Ajinomotto, Soya sauce and chilli sauce. Let the mixture boil and finally add mushrooms and scallion. Before serving, garnish with coriander leaves and mint leaves, if you love cheese, then garnish soup with goat cheese with some black pepper. Serve in a bowl that is cured.

Marinated mushrooms: During weekends one can settle for marinated mushrooms. This recipe is granted by my brother. This can serve as an appetizer, snacks and even as salad.

The main ingredients are mushrooms instead of them; you can use slices of paneer, scallions and even boneless chicken will do...

How to prepare marinate

Simply mix the main ingredients in a saucepan. These could include flour, curd, chili flakes, black pepper, vinegar, and brown sugar.

Ingredients:

1-2 olive oil tbsp
200gms red, green and yellow Bell Pepper (steamed) and cut into thin slices
500gms Mushrooms
250gms scallions
2-3 tbsp of whipped cream
3-4 tbsp curd
2 teaspoons chili flakes
1 teaspoon black pepper
Coriander leaves
1 lemon
Vinegar and salt according to taste

Method

In a sauce pan, add flour, mix it with water till a thick paste is prepared, slowly add curd, melted brown sugar, and whipped cream vinegar, salt, chili flakes to add color. Mix them properly; after the paste is prepared add mushrooms and scallions. Leave them to marinate for an hour and refrigerate them for half an hour.

Do not refrigerate for more time else you’ll have to wait for them to melt at room temperature. Finally, tandoor marinated material.

Note: Before using the tandoor, spread olive oil on the tandoor plate and place a silver foil over it, this will cook your material inside out. Keep a watch while doing this procedure, within few minutes your mushrooms are ready to be served.

For garnishing you need leaves of coriander and steamed bell pepper.

Here is another recipe of marinated mushrooms, in case you want to have a change of taste.

Sounds like a great way to calm your cravings! For a nice change of pace from a packed snack, try this one. I have not tried this, try and give your views.
Honey -glazed Snack mix

8 cup Crispix cereal
3 cup miniature pretzels
2 cup pecan halves
2/3 cup butter or margarine
1/2 cup honey

Method
In a large bowl, combine the cereal, pretzels and pecans; set aside.

1 In a small saucepan, melt butter; stir in 2 honey until well blended.
2 Pour over cereal mixture and stir to coat.
3 Spread into two greased 15×10 inch baking pans.
4 Bake at 350 F for 12-15 minutes or until mixture is lightly glazed, stirring occasionally.
5 Cool in pan for 3 minutes; remove from pan and spread on waxed paper to cool completely. Store in an airtight container.

Health of an individual depends on his nutrition. It is this well-known fact that has led man to be more aware of the food he consumes.

A large number of diseases are known to be diet related. A certain diet may itself be the cause of disease or alter the course of a known disorder such as diabetes or kidney disease.

Your dietary habits have a direct relation with your brain; the healthier your diet is, the sharper your brain will be. Surprisingly, according to a recent finding, it was found that children with higher IQ seem to be more inclined towards becoming vegetarians. Studies have proved that non-vegetarian food leads to obesity, cardiovascular diseases, arthritis and accumulation of fats and proteins.

We must not kill or hybrid the animals just for the meat. Animals do have life and we have no right to perish them. The same quantity and quality of proteins, minerals, and essential vitamins needed are also available in vegetables and synthesized food, so there is not point in killing animals and ultimately killing ourselves just for the sake of taste.

After a long awaited study federal scientists conclude that meat and milk from cloned animals is safe to eat and is allowed to enter the food supply chains without any special labeling.

The finding is a strong signal that Food and Drug Association (FDA) will allow the cloned food in markets after its approval.

Cloning animals is currently too expensive, but framers could clone top quality animals for breeding. Offspring of those clones could then enter the food supply chain without labeling, the findings imply. Cloning: it is a science involved in making the exact genetic copy of an organism, tends to produce a higher proportion of miscarried embryos and abnormal offspring than traditional reproduction.

But FDA has found that cloned animals that survive infancy seem to be as healthy as other animals and food from them is safe.

Creamy rich green avocados are available throughout the year; they are the most abundant and are best during the spring and summer in California. The avocado is colloquially known as the Alligator peer, reflecting its shape, and leather like appearance of its skin. It can supplement vitamin K, vitamin B6 (pyridoxine) and vitamin C.

Avocados contain oleic acid, a monounsaturated fat that may help lower cholesterol. Avocados are a good source of potassium, a mineral that helps regulate blood pressure. Adequate intake of potassium can help to guard against circulatory diseases, like high blood pressure, heart disease or stroke. It is a concentrated dietary source of the carotenoid lutein, it also contains measurable amounts of related carotenoids (zeaxanthin, alpha-carotene and beta-carotene) plus significant quantities of tocopherols (vitamin E).

Enjoying a few slices of avocado in your salad, will not only add a rich, creamy flavour but also increase your body’s ability to absorb the health-promoting carotenoids that a vegetable provides.

Enjoy Avocado salad

Ingredients

1 big or 2 small size Genuine California avocado(s)
1 to 2 kiwi fruit (not very soft and sweet)
1/2 Pound fresh spinach (baby spinach preferred)
5 to 6 scallions
1/2 green bell pepper.
1 to 2 plum tomato or 1/2 tomato
1 Lemon juice (1 whole lemon)
Salt to taste

Preparation

1. Chop the scallions, bell pepper fine.
2. Cut the kiwis and tomatoes in fine cubes.
3. Mesh the avocados.
4. Mix ingredients.
5. Steam the spinach in a pan with a very little water, wait till water gets evaporated, almost totally, and spinaches should get softened.
6. Add the spinach on top.
7. Again mix them by adding salt and lemon juice.
