Beets consists an important part of summer vegetables and it comes in white, red, yellow and candy stripe and is a very important source of potassium and folate. there are a lots of ways to cook-up beets. But today I would share with you the South-Indian style of cooking beets, which is not only yummy but also less spicy.
Ingredients
Chopped Beets
Whole Mustard Seeds
Grated Coconut
Curry Leaves
Whole Red Chilies
Ginger-Garlic Paste
Chopped Onion
Turmeric Powder
Oil
Method
1. In a pressure cooker add chopped beets, ginger-garlic paste, salt and turmeric powder. Add one fourth cup of water and let it pressure cook for 7 minutes.
2. In a tablespoon of oil add mustard seeds, whole red chilies, curry leaves. Once they start spluttering add coconut and the beets mixture. Stir-fry for 10 minutes or until the moisture dries out completely.
Serve with rice and pulses.
