I love to have a leisurely dinner in the summer nights, I mean having it on my terrace with wind from coconut trees hugging my face. The dinner has to be romantic but simple, considering the summer heat. I love having low-calorie chicken fry with steamed pancakes in the night.



To make a low-cal chicken fry, you need to do the following:



1. Whip up tomatoes, green chili paste and a culantro-mint paste.

2. Fry garlic and whole cumin seeds in a teaspoonful of oil and transfer it to a microwave dish.

3. In the microwave dish add chicken, the tomato-herb sauce, salt and a dash of cinnamon powder.

4. Microwave it for 25 minutes.



Garnish it with low-cal yogurt and sesame seeds.
