As I was moving through my vegetable garden, what caught my attention was the look of sparkling baby eggplants. Then I thought of the red ripe tomatoes I had from the greenmarket. I could not afford to waste much time. The recipe is as follows:



Ingredients

Baby eggplants (halved)

Chopped Tomatoes

Chuck Lamb

Chopped Onions

Crushed Garlic

Black Pepper

Chopped Basil

Mozarella Cheese

Salt



Method



1. Fry eggplants in oul, until brown.



2. Prepare sauce by frying onions, garlic, tomatoes and basil.



3. Add minced lamb and fry until cooked. Add the seasonings and mix it properly.



4. Line a baking tray and layer it with eggplants, meat sauce and cover it with cheese.



5. Bake until the cheese melts and the upper-crust is brown.
